White Chocolate Cherry Blondies

- 1/2 cup egg substitute
- 1/4 cup canola oil
- 1/4 cup unsweetened applesauce
- 1 1/2 teaspoons vanilla
- 1 1/3 cups all-purpose flour
- 1/2 cup brown sugar, packed
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup cherry-flavored dried cranberries or 2/3 cup dried cherries
- 1/3 cup vanilla chip
- 1/3 cup walnuts, chopped
Directions:

Preheat oven to 350.

In a large bowl beat or whisk eggs, oil, applesauce, and vanilla. Whisk in brown sugar.

Add flour, baking powder, and salt; stir until well blended. Stir in 1/3 c cranberries.
-
Spread in a greased 9 x 13 pan coated with cooking spray. Sprinkle remaining cranberries, white chocolate chips, and walnuts on top. Gently press toppings down.

Bake at 350 for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack and cut into bars.

Fool Proof Chocolate Chip Banana Bread

- 2 cups flour (all-purpose)
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter or 1/2 cup margarine
- 3/4 cup brown sugar, Lightly packed
- 2 eggs
- 4 -5 mashed overripe bananas (to make approx 2 1/2 Cups)
- 1 cup chocolate, chip morsels
Directions:

Preheat Oven to 350 degrees.

Lightly grease 9"x5" loaf pan (glass or metal).
-
In large bowl, combine flour, baking soda, and salt.
-
In a second bowl, mix butter, brown sugar and eggs. Then stir in mashed bananas, until blended.
-
Stir banana mixture into flour mixture, until nicely moistened.
-
Stir in all but a few chocolate chip morsels, to be used later.
-
Pour mixture into greased loaf pan.
-
Sprinkle remaining morsels on top of batter.
-
Bake in Preheated oven for 65-75 minutes, or until toothpick inserted into center comes out clean.

Let cool in pan for 5 to 10 minutes, then turn it over onto a dish or wire rack. Let cool another 10 minutes, as morsels will be hot.

Stove Top Chicken in Mustard Sauce

- 4 boneless skinless chicken breasts
- 1 -2 tablespoon olive oil (will depend on your pan)
- poultry seasoning (to season chicken before cooking)
Sauce
- 1/4 cup mayonnaise (you can use light, but do not use fat free)
- 1/4 cup light sour cream
- 1 tablespoon Dijon mustard
- 1/2 teaspoon dry mustard
- 1/4 teaspoon ground ginger
- 3/4 cup chicken stock (can be canned)
- chopped parsley (to garnish) (optional)
Directions:

Cut slits across each chicken breast but not all the way through.
-
This is so the sauce penetrates the breast.
-
Season chicken with poultry seasoning on both sides.
-
Heat olive oil in large frying pan big enough to hold the chicken in a single layer.
-
Brown chicken well.
-
Combine and whisk all the sauce ingredients together.
-
When chicken is good and brown, lower heat and pour sauce over.
-
Simmer 20 minutes, being sure to keep heat at a very low simmer.

Serve with sauce and a bit of parsley over each breast.

Creamy Italian Chicken

- 4 boneless skinless chicken breasts, cut into chunks
- 1 envelope Italian salad dressing mix
- 3/4 cup water
- 1 (10 ounce) can cream of chicken soup
- 1 (8 ounce) package cream cheese
Directions:

Mix water and dressing.
-
Pour over chicken in the bottom of a skillet.
-
Cover and cook chicken until done and no longer pink.
-
In a small mixing bowl, beat cream cheese and soup until no longer lumpy (it may help to heat in microwave).

Pour over chicken and heat through.
-
Serve over rice or pasta.

Down Home Sausage and Bean Bake

- 1 lb smoked sausage, cut into 1-inch pieces
- 1 (15 ounce) can pork & beans
- 1/2 cup chopped onion
- 1 cup brown sugar, firmly packed
- 1 tablespoon prepared mustard
- 1 tablespoon Worcestershire sauce
- 1/3 cup dark corn syrup
Directions:

Brown sausage in large skillet.
-
In a large mixing bowl, combine remaining ingredients. Then mix in sausage and pour into baking dish.

Bake for 40 minutes at 350 degrees.
