Triple Chocolate Banana Muffins

 

Directions:

  1. Preheat oven to 350.
  2. Grease muffin tin.
  3. Sift together flour, cocoa, sugars, baking soda, baking powder, and salt.
  4. In a separate bowl, combine mashed banana, oil, egg, and vanilla.
  5. Add wet mixture to dry mixture, stir until just combined.
  6. Fold in chocolate chips.
  7. Divide batter between 10 muffin cups.
  8. Bake 20-25 minutes until done.
  9. Mine are usually done at 18 minutes, but my oven cooks quickly.
  10. Do not overbake.

Cinnamon Sticky Buns

 

Directions:

  1. In a saucepot combine the brown sugar, corn syrup, and the butter.
  2. Cook until sugars are dissolved well.
  3. Add the broken nut pieces.
  4. Spoon mixture into the bottom of a 9 x 13 inch baking pan with 2 inch sides.
  5. In a small bowl combine the granulated sugar, cinnamon, nutmeg.
  6. Cut each biscuit in half across. Just to make more pieces of dough.
  7. Dip each biscuit into the cinnamon dry mixture.
  8. Place cut side down into the baking pan over the brown sugar mixture.
  9. Bake 375 degrees F.
  10. oven for 23- 30 minutes, until golden brown.
  11. Invert onto a serving tray.

Mashed Potato Spinach Casserole

 

Directions:

  1. Peel, cook and mash potatoes.
  2. Add sour cream, salt, pepper (and butter if desired).
  3. Mix in enough milk to bring it to your favorite mashed potato consistency.
  4. Add spinach (and seasonings if desired).
  5. Place in casserole dish and top with grated cheddar cheese. (sometimes I also mix a bit of the cheese in with the potatoes before topping).
  6. Bake in 350 oven for 20-30 minutes.
  7. We like to serve this with corn, which usually ends up mixed in with all the rest.

Traditional Southern Fried Chicken

 

Directions:

  1. Marinate chicken in vinegar for a minimum of 1 hours -- overnight is better.
  2. Mix flour, spices, and baking powder.
  3. Heat oil to 350 degrees Fahrenheit.
  4. Coat chicken in flour mixture.
  5. Brown on both sides; cover.
  6. Fry 15 minutes one side.
  7. Fry 15 minutes other side.
  8. Take off lid.
  9. Fry 5 minutes extra to crisp.

Martha’s Rice Salad

 

Directions:

  1. Place cooked rice in medium bowl and keep warm.
  2. Mix together red onion and vinegar in a small bowl.
  3. Let sit 5 minutes; strain onion in a sieve, discarding vinegar.
  4. Place lemon juice, oil, garlic, salt and pepper to taste in another small bowl, and whisk to combine.
  5. Drizzle lemon mixture over warm rice.
  6. Add reserved onion, dill, and lemon zest; toss to combine.
  7. Serve.
