Triple Chocolate Banana Muffins

- 1 1/2 cups flour
- 5 tablespoons cocoa
- 3/4 cup white sugar
- 1/4 cup packed light brown sugar
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/3 cups mashed bananas
- 1/3 cup canola oil or 1/3 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips
Directions:

Preheat oven to 350.
-
Grease muffin tin.
-
Sift together flour, cocoa, sugars, baking soda, baking powder, and salt.
-
In a separate bowl, combine mashed banana, oil, egg, and vanilla.
-
Add wet mixture to dry mixture, stir until just combined.
-
Fold in chocolate chips.
-
Divide batter between 10 muffin cups.
-
Bake 20-25 minutes until done.
-
Mine are usually done at 18 minutes, but my oven cooks quickly.
-
Do not overbake.

Cinnamon Sticky Buns

- 1 cup packed brown sugar
- 1/2 cup corn syrup
- 1/2 cup butter or 1/2 cup margarine
- 1 cup walnuts or 1 cup pecans, broken
- 1/2 cup white sugar
- 2 1/2 tablespoons ground cinnamon
- 1/4 teaspoon nutmeg, fresh ground
- 2 (17 1/3 ounce) cans large refrigerated biscuits
Directions:

In a saucepot combine the brown sugar, corn syrup, and the butter.
-
Cook until sugars are dissolved well.
-
Add the broken nut pieces.
-
Spoon mixture into the bottom of a 9 x 13 inch baking pan with 2 inch sides.
-
In a small bowl combine the granulated sugar, cinnamon, nutmeg.
-
Cut each biscuit in half across. Just to make more pieces of dough.
-
Dip each biscuit into the cinnamon dry mixture.
-
Place cut side down into the baking pan over the brown sugar mixture.
-
Bake 375 degrees F.
-
oven for 23- 30 minutes, until golden brown.

Invert onto a serving tray.

Mashed Potato Spinach Casserole

- 4 large potatoes
- 1/3-1/2 cup sour cream
- 1 teaspoon salt
- 1 dash pepper
- 2 -4 tablespoons butter (optional)
- milk
- 1 cup cooked frozen spinach, well drained and chopped (I just use frozen, thawed and pressed dry)
- 1/2-1 cup grated cheddar cheese
- 1/2 teaspoon dill seed (optional)
- 2 teaspoons chives (optional)
Directions:

Peel, cook and mash potatoes.
-
Add sour cream, salt, pepper (and butter if desired).
-
Mix in enough milk to bring it to your favorite mashed potato consistency.
-
Add spinach (and seasonings if desired).
-
Place in casserole dish and top with grated cheddar cheese. (sometimes I also mix a bit of the cheese in with the potatoes before topping).
-
Bake in 350 oven for 20-30 minutes.

We like to serve this with corn, which usually ends up mixed in with all the rest.

Traditional Southern Fried Chicken

- 1 whole cut up chicken
- 1/2 cup vinegar
- 2 cups self rising flour
- 1 teaspoon salt
- 2 teaspoons black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon baking powder
- 1/2 cup oil (for frying)
Directions:
-
Marinate chicken in vinegar for a minimum of 1 hours -- overnight is better.
-
Mix flour, spices, and baking powder.
-
Heat oil to 350 degrees Fahrenheit.
-
Coat chicken in flour mixture.
-
Brown on both sides; cover.
-
Fry 15 minutes one side.
-
Fry 15 minutes other side.
-
Take off lid.
-
Fry 5 minutes extra to crisp.

Martha’s Rice Salad

- 1 cup long-grain white rice, cooked
- 1/2 small red onion, finely chopped
- 3 tablespoons red wine vinegar
- 3 tablespoons fresh lemon juice (1 lemon)
- 2 1/2 tablespoons oil
- 1 1/2 teaspoons finely chopped garlic
- salt and pepper, to taste
- 3 tablespoons roughly chopped fresh dill
- 1 grated lemon, zest of
Directions:

Place cooked rice in medium bowl and keep warm.
-
Mix together red onion and vinegar in a small bowl.
-
Let sit 5 minutes; strain onion in a sieve, discarding vinegar.
-
Place lemon juice, oil, garlic, salt and pepper to taste in another small bowl, and whisk to combine.
-
Drizzle lemon mixture over warm rice.
-
Add reserved onion, dill, and lemon zest; toss to combine.
-
Serve.
